Pre-heat grill to 400°F,set up for indirect cooking. Place a cooling rack on top of your grill grate to pre-heat along with the grill to keep the bacon twists flat while cooking.
Combine brown sugar and seasonings, mixing well.
Dip each slice of bacon into the mixture, and coat well.
Twist each slice tightly to create spirals by holding each endof the piece of bacon. Thin-sliced bacon works well to keep the tight twist.
Arrange the twisted bacon on the cooling rack. Make sure the bacon slices are not touching each other on the grill.
Smoke the bacon for nearly 20 minutes. Keep an eye on it to ensure the bacon does not char. The cooking time will vary depending on your grill and the thickness of the bacon.
Once the bacon is cooked and has a caramelized coating, remove it from the grill. Do not worry if the pieces are still a little soft. They will firm up as they cool.
Place the bacon twists on foil or parchment paper to cool.
