Smoked Candy Bacon Twists

~ A twist on Snoop Dogg’s Billionaire Bacon Twists

Ingredients
  

  • 1 lb Thin-sliced Bacon
  • 1/2 cup Brown Sugar
  • 2 tbsp Uncle Larry's BBQ Rub (by Savor Products)
  • 1/4-1/2 tbsp Crushed Red Pepper, depending on heat desired

Instructions
 

  • Pre-heat grill to 400°F,set up for indirect cooking. Place a cooling rack on top of your grill grate to pre-heat along with the grill to keep the bacon twists flat while cooking.
  • Combine brown sugar and seasonings, mixing well.
  • Dip each slice of bacon into the mixture, and coat well.
  • Twist each slice tightly to create spirals by holding each endof the piece of bacon. Thin-sliced bacon works well to keep the tight twist.
  • Arrange the twisted bacon on the cooling rack. Make sure the bacon slices are not touching each other on the grill.
  • Smoke the bacon for nearly 20 minutes. Keep an eye on it to ensure the bacon does not char. The cooking time will vary depending on your grill and the thickness of the bacon.
  • Once the bacon is cooked and has a caramelized coating, remove it from the grill. Do not worry if the pieces are still a little soft. They will firm up as they cool.
  • Place the bacon twists on foil or parchment paper to cool.

Smoked 'Angel' Eggs

Ingredients
  

  • 12 Hard-boiled Eggs (cooled)
  • 1/4 cup Mayo or Greek Yogurt
  • 1-1/2 tbsp Dijon Mustard
  • 1 tsp Savor All-Purpose Seasoning (by Savor Products)
  • Bacon Pieces, optional

Instructions
 

  • Pre-heat grill to 225°F,set up for indirect cooking.
  • Smoke hard-boiled eggs on the grill at 225°Ffor 30 minutes to infuse a subtle smoky flavor.
  • Cool eggs and then peel them.
  • Remove yolks and transfer to a medium-sized bowl.
  • Add mayo (or yogurt), mustard, and seasoning. Use a fork to mash well.
  • Mix until smooth, adding additional mayo and/or mustard for desired creaminess
  • Place mixture into a plastic bag, and cut one corner to ‘pipe’ the filling into each egg white.
  • Top with cooked bacon pieces, if desired.
  • To enhance the presentation, thinly slice the bottom of the egg whites to provide a flat surface for your egg display.

Notes

1) You can also ‘cook’ your raw eggs on the grill by placing them directly on the grill grates. Cook at 325°F for 30 minutes. Where the eggs are touching the grill, you will get small brown spots on the shells, but they are harmless and do not affect the quality of the eggs. Once cooked, cool the eggs before smoking them at the lower temperature (step 1 above).
2) An option is to smoke your cooked eggs on the grill with the shell removed (step 1 above).
3) Additional optional ingredients include pickle relish and even hot sauce for a kick.

Smoked Candy Sweet Potatoes

Ingredients
  

  • 2 lbs Sweet Potatoes
  • 1 cup + 1 tbsp Light Brown Sugar
  • 1/4 cup Orange Juice, freshly squeezed from typically 1 large orange
  • 1/2 cup + 1 tbsp Light Corn Syrup
  • 6 tbsp Unsalted Butter, cut into cubes
  • 1 Naval Orange, peeled and thinly sliced

Instructions
 

  • Pre-heat grill to 350°F, set up for indirect cooking.
  • Cook whole sweet potatoes on the grill for 30-45 minutes, turning halfway through.
  • Cool sweet potatoes and then peel them. (Peel removes very easily once cooled.)
  • Cut sweet potatoes into ¼” thick rounds.
  • Lay the sweet potatoes into a backing dish.
  • Sprinkle1 c. brown sugar evenly over the sweet potatoes.
  • Drizzle with orange juice and also 1 c. corn syrup.
  • Place cubes of butter on the sweet potatoes.
  • Place the orange slices on the sweet potatoes.
  • Drizzle the remaining 1 T. corn sugar and 1 T. brown sugar on the orange slices.
  • Place the baking dish, uncovered, on the grill, and bake for 30-45 minutes.

Grilled S'mores Nachos

Imagine a steaming plate of nachos but instead of cheese...with chocolate and marshmallows! Nachos for dessert! There are so many topping options you can add on this versatile recipe.
Course Dessert

Ingredients
  

  • White Corn Chips or Graham Crackers
  • Chocolate Chips, any variety
  • Mini and Large Marshmallows

Instructions
 

  • Layer white corn chips or graham crackers in a foil pan.
  • Top with chocolate chips and mini marshmallows. Repeat two or three times.
  • Top with large marshmallows as the final layer. 
  • Heat on the grill until melted. 250-350F works fine.

Notes

If using white corn chips, I like to sprinkle the chips with cinnamon and sugar. Either honey or cinnamon graham crackers work well also. We placed the dish in the picture at high heat quickly to achieve a char on the large marshmallows. Feel free to add other toppings, such as caramel and fruit.
Grilled bananas also make an excellent topping! Take an unpeeled banana and cut it crosswise and then lengthwise into 4 planks. Grill flesh side down to caramelize the pieces.

Smoked Cream Cheese

What a super simple and versatile dish to have at your next tailgate! You can customize the seasoning used to mix up how you use this delicious treat!

  • 1 block Cream Cheese
  • Savor Products Uncle Larry's BBQ Rub

Instructions
 

  • This makes the best dip! Eat it right off the grill. While not necessary, I like to cut the block of cream cheese in half lengthwise to get more seasoning in your dip.
  • Savor Products Uncle Larry's BBQ Rub on the cream cheese is great to pair with pretzels, celery, and crackers. Use Savor Products Taco Auténtico seasoning on the cream cheese and have tortilla chips as dippers. You can even sprinkle cinnamon and sugar on the cream cheese and have graham crackers as a side.
  • Coat both sides of the cream cheese piece with your favorite seasoning. Take a knife and lightly score the top of the cream cheese in a cross-hatch pattern.
  • Place each cream cheese piece on foil, and seal the foil edges, leaving room above the block of cheese. Grill at 210-225F for about an hour. Serve warm.
 

Grilled Breakfast Pizza

Grilled pizzas are perfect at any time of the day! Everyone can get in on the fun and personalize their own pizza to grill. From adding breakfast toppings to meats and veggies to even sweet items for dessert, grilled pizzas can be a staple for tailgating all day long!

Ingredients
  

  • 2 12" Pizza Crusts
  • 7 oz Crème Fraiche
  • 1 lb Breakfast Sausage
  • Cheddar Cheese, shredded
  • Gruyere Cheese, shredded
  • Mozzarella Cheese, pieces

Instructions
 

  • Grilled pizzas are so easy and versatile! For the breakfast pizza, crème fraîche works well as a base. Spread it in a thin layer on the crust.
  • Add cooked breakfast sausage or any meats you wish sprinkled around the pizza.
  • Top with shredded mild cheddar and gruyere, along with fresh mozzarella pieces (or any cheese you desire).
  • Right before you put the pizza in the oven, crack an egg right in the center of the pizza.
  • Cook until the pizza crust is done and the egg is cooked. Typical temperatures to cook pizzas on the grill (depending on style) are 550-600F. Don't be afraid to increase the grilling temperature or be creative with your toppings!

Notes

For breakfast pizzas, feel free to top with all of your staple 'big breakfast' ingredients, such as breakfast sausage, potatoes, cheese, tomatoes, peppers, etc. Freshly grated cheese melts nicely on the pizzas.
